Four Winds Beach House & Spa Cheese Soufflé
| Ingredients |
6oz cheddar cheese, grated
6 Tb butter
6 Tb all-purpose flour
1 tsp salt
1/2 tsp paprika
dash cayenne pepper
1 1/2 C Milk
6 eggs, large, seperated |
Grate cheese, set aside; in top of double boiler over boiling water, melt butter; blend in flour and seasonings. Add milk all at once and cook, stirring constantly, until mixture is smooth and thickened. Add cheese and stir until melted. Remove from heat.
Beat egg yolks until thick; gradually stir into cheese mixture, blending thoroughly.
Beat egg whites in a large bowl, until stiff but still moist. Gradually pour cheese mixture into the whites, folding carefully until blended.
Bake in a two-quart soufflé dish or casserole in moderate oven, 350 Deg. F, for 45 – 50 Minutes or until puffed and golden brown.
Serve immediately. Makes 6-8 servings.
Additional Notes: Alternate way of preparing first step: melt butter in microwave. Heat milk in microwave. Blend flour and seasonings with butter. Add milk and stir until blended. Cook in microwave on high for 2 –3 minutes, stirring after each minute, until the mixture is smooth and thickened. Proceed as above.
Blueberry Oven Pancake.
This recipe is always a hit. Is a bit unusual and can be made with fresh or frozen blueberries. Having made this recipe in excess of 500 times I think I have the bugs worked out of it!

2Tbsp (30ml) butter
4eggs
½ cup (125ml) all purpose flour
1cup (227ml) milk
½ tsp (2ml) salt
2-4 tbsp (30-60ml) sugar
1 tsp (5ml) vanilla
½ cup (115ml) blueberries. |
Preheat oven to 400 degrees (200C). Preheat the dish or pie plate (I use a 9.5 inch deep dish pyrex pie plate. If you use a smaller or shallower dish it may overflow or you may slop it on the way to the oven). Break the eggs into a medium bowl and whisk until well beaten. Add the flour and whisk until the lumps disappear. Add the milk, salt, sugar and vanilla and whisk until blended. Remove the pie plate from the oven and add the butter, it should sizzle and bubble. Quickly, so the plate doesn't cool, add the egg mixture, and sprinkle the blueberries on top. Immediately return it to the oven and bake for 25 to 35 minutes until the center puffs up.
Sprinkle with icing sugar and cut in quarters to serve four people. I serve it with Canadian Maple syrup.
Blueberry Muffins.
What could be special about blueberry muffins? Well, this is probably my most requested recipe. Between the guests and the family these muffins disappear quickly.

1cups flour
½ cup sugar
½ tsp salt
2tbsp baking powder
Rind of one lemon and one orange
1egg
1cup liquid (usually milk, but especially good with 1/3 cup vanilla yogurt, 1/3 cup half&half cream, and 1/3 cup milk)
½ cup butter, melted
1cup fresh or frozen blueberries |
Preheat oven to 425 degrees. Mix flour, sugar,baking powder, salt and lemon and orange rind in a large bowl. Whisk egg in a medium bowl, add milk and melted butter. Add the egg mixture to the dry ingredients and stir until just mixed. Stir in blueberries. Fill a muffin tins, makes 12 muffins and bake for 20 minutes.

Overnight Caramel French Toast

½ Cup Butter
1 Cup Brown Sugar
2 Tbs Light Corn Syrup
5 Large eggs
1 ½ Cup Milk
1 tsp Vanilla
¼ tsp salt. |
Thickly slice a loaf of day old French bread, I cut the slices about 1 ¼ inches thick. Trim off crusts and fit into a 9 X 13 inch pan. Remove bread.
Combine butter, brown sugar, and corn syrup. Heat over double boiler until sugar is melted, stirring constantly. (You can do this in the microwave, heat on high for 2 – 3 minutes, stirring after each minute.)
Pour butter/sugar sauce into the 9 X 13 inch pan and spread evenly over pan. Replace bread on top of the sauce.
In a large bowl, beat eggs lightly. Add milk, vanilla and salt. Mix thoroughly with whisk.
Pour egg mixture over the bread in the 9 X 13 inch pan. Cover with plastic wrap and let sit in the refrigerator over night.
Bake at 350 degrees F. for 30 minutes, or until golden and the center starts to puff up.
Serves 8.
I serve with cold applesauce.
